Real basa is Pangasius bocourti, one of 21 species belonging to the Pangasiidae family of catfish, which is found throughout most of Southeast Asia. Basa have been grown by Vietnamese and Cambodian fish farmers along the Mekong River and as a lot of people who visit Vietnam have discovered, basa is a pretty tasty fish, with a delicate texture and nice white flesh. The fast-flowing waters of the Mekong give basa meat a nice clean taste. Our fillets are sold by the pound. A two-pound portion serves four to five people.

Sauteed Basa Fillets
Ingredients:
- 2 lbs. Of Basa Fillets
- All-purpose Flour
- Kosher Salt
- freshly ground Black Pepper
- Fresh Lemon
- Fresh Parsley, chopped
Lightly salt and pepper fish fillets. Dip in flour, shaking off any excess and sautee in hot unsalted butter or margarine until golden brown and crisp. Squeeze lemon juice over and sprinkle with parsley, if desired.
