Fresh, farm-raised rainbow trout a mild, delicate meat, pale brown to almost white in color. Rainbow Trout has delicate taste and a flaky texture, which makes it a very popular fish. Can be grilled, baked, broiled, poached, deep-fried, and sautéed. Our fillets average about 5 oz each. Our fillets are sold by the pound. A two-pound portion serves four to five people.

Fresh Trout Recipes

Rainbow Trout Almondine

Ingredients:
  • 2 lbs. of Fresh Trout Fillets
  • 1/2 cup Flour
  • 2 eggs whisked
  • 1 cup blanched sliced Almonds
  • Vegetable Oil
Rinse Rainbow Trout fillets under cold water and let drain.
Dredge Fillets in flour shaking off excess flour.
Dip Fillets in Egg mixture.

Dip fillet side only in sliced Almonds being sure to coat evenly.
Sauté in medium hot oil until nicely browned on both sides and cooked through.
