Chilean sea bass, also known as Patagonian toothfish, is not a true sea bass, but is a member of a family of fish found only in the southern seas. In Chile, it is called bacalao de profundidad-cod of the depths, but similarity between the two fish ends with their pearly white flesh. Chilean sea bass has a very large flake and is very moist and tender, it is rich and full of flavor, a truly exceptional fish. Our fillets are sold by the pound. A two-pound portion serves four to five people.
